Asian flavoured Shredded Chicken and Pak Choi

Ingredients
- 4 tbsp oil
- 2 Pak Choi halved lengthways
- 400 g shredded chicken
- 4 shallots sliced
- 2 cloves garlic sliced
- 1 inch ginger sliced
- 1 lime zest and juice
- 3 tbsp sweet chilli sauce
- 2 tbsp soy sauce
- 1 tsp fish sauce
- 4 tbsp fresh coriander torn
Instructions
- Heat 2 tbsp of oil in a large non-stick pan, over medium heat, add the halved pack Choi and sear for 4 minutes to part cook the Pak-choi. Transfer the Pak-Choi on the serving dish and keep warm.
- Then, in the same pan, increase the heat to high. Add a drizzle more of oil and add the shallot, garlic, ginger and the shredded chicken and cook over high heat for he noodles in the sauce mixture.
- Remove from the heat and transfer in your serving dishes.
- Serve the chicken with some shredded cabbage, rocket and beansprouts with the sauce on the side.
