Whoppies Mixed Berries And Clotted Cream

Ingredients
  

  • 125 g butter softened
  • 200 g caster sugar
  • 1 egg
  • 170 g natural yogurt
  • 300 g plain flour
  • 1 tsp bicarbonate of soda
  • ½ tsp baking powder
  • 2-3 drops pink food coloring
  • 250 g clotted cream
  • 10 raspberries
  • 10 blueberries
  • 2 tbsp icing sugar
  • 1 tbsp lemon juice

Instructions
 

  • Preheat oven to 160c/. Line 4 oven trays with baking paper.
  • In a large mixing bowl, place the butter and sugar, and beat using an electric mixer to cream until pale and creamy. Add the egg and beat until combine.
  • Pour half the flour, bicarbonate of soda and baking powder and then half the natural yogurt, combine until smooth then add the rest of the flour and yogurt and the food coloring and stir to combine thoroughly.
  • Using a piping bag, pipe the mixture on the baking tray, and bake for 8-10 minutes or until puffed and golden.
  • Remove from the oven and set aside for 5 minutes to cool slightly before transferring to a wire rack to cool completely.
  • In the meantime, place in a small bowl, the berries, lemon juice and icing sugar and using a small hand blender. Blend until smooth. Add the clotted cream and combine until smooth.
  • Place whoopies, base-side up, on a clean work surface. Spread the clotted cream mixture over half the cakes. . Sandwich together with remaining cakes. Sprinkle with icing sugar.
