Place the turkey mince, breadcrumbs, cheese and parsley into a small bowl. Season with a pinch of salt and pepper. Mix well to combine. Shape into 12 patties and set aside in the fridge for 30 minutes if possible.
Preheat the barbecue or griddle pan to medium.
In a large bowl, combine the shredded cabbage, carrot and onion. Add the mayonnaise, lemon juice and mustard to the bowl and combine. Season with salt and pepper and toss gently to combine.
Brush the patties with some oil and place on the barbecue or griddle pan. Cook patties for 3-4 minutes each side or until browned and cooked through.
To assemble, top each burger buns base with lettuce, coleslaw, then place a turkey pattie on top, add the top of the bun and serve.
