Madeira Cranberry Sauce

  • 225 g cranberries
  • 100 g caster sugar
  • 1 orange Juice & zest
  • 150 ml Madeira wine or other such as orange juice, port, …
  • 1 cinnamon stick


  • Place all the ingredients into a pan and bring to the boil.
  • Turn the heat down and simmer for 10-12 minutes until the liquid has reduced.
  • Remove the cinnamon stick then pour the relish into a jar.
  • Store in the fridge for a few weeks.
  • If you sterilise the jar, you can then keep the cranberry relish at room temperature until opened!
