Preheat the air fryer to 200˚C.
In a mixing bowl, combine the corn flour with 1 tbsp of cold water and add the sweet chilli jam, oyster sauce, rice wine vinegar. Stir to combine and check the seasoning.
Add the chicken pieces and coat the chicken with the mixture. Marinate, if possible, for 10-15 minutes.
If desired, spray some oil onto the air fryer basket, then place the pieces of chicken into the basket.
Air fry for about 20-25 minutes, turning the chicken halfway through until cooked through and crispy the skin is crisp and golden brown.
Serve with mash potatoes and spoon of chilli crush dressing or your favourite side.
