Citrus Chicken Skewers

For the marinade:

  • 1 orange Juice and zest
  • 1 lemon or lime Juice and zest - or lime
  • 4 tbsp honey
  • 2 tbsp oil
  • 1 mint chopped
  • 1 Pinch ground cumin
  • 1 Pinch ground Coriander


  • 500 g Chicken fillet diced - (4-5 dice of chicken per skewer)
  • 250 g Cherry tomatoes
  • 2 peppers red or yellow
  • 100 g Mushrooms halved
  • 1 Courgette diced
  • Red onion


  • Prepare marinade by whisking all ingredients together.
  • Dice chicken into bite size cubes and pour into marinade.
  • Allow to rest for up to two hours.
  • Thread onto a skewer with some mixed vegetables and barbecue until coated on all sizes using the additional marinade to baste the meat during cooking.
  • They will take up to 12-15 minutes depending on how large the chicken pieces are.
  • Make sure to cut them into the centre just to make sure they are cooked.
  • Serve with a large green salad
