Ingredients
  

  • 3 shallots diced
  • ½ red cabbage cored and shredded
  • 1 cooking apple cut into chunk
  • 70 g muscovado sugar
  • 50 g raisins or mixed dried fruit
  • 1 stick of cinnamon
  • 2 whole star anis
  • 300 ml red wine
  • 40 ml red wine vinegar

Instructions
 

  • In a large saucepan, place the shallot and cabbage, apple. Add the sugar, dried fruit, spices and red wine and vinegar. Season with salt & pepper.
  • Cover the pan with a lid and over a very low heat, cook for 2 - 3 hours.
  • Remove the cinnamon stick and star anis. Set aside until needed or if prepared in advance place in container and store in the freezer.
