Ingredients
- 3 shallots diced
- ½ red cabbage cored and shredded
- 1 cooking apple cut into chunk
- 70 g muscovado sugar
- 50 g raisins or mixed dried fruit
- 1 stick of cinnamon
- 2 whole star anis
- 300 ml red wine
- 40 ml red wine vinegar
Instructions
- In a large saucepan, place the shallot and cabbage, apple. Add the sugar, dried fruit, spices and red wine and vinegar. Season with salt & pepper.
- Cover the pan with a lid and over a very low heat, cook for 2 - 3 hours.
- Remove the cinnamon stick and star anis. Set aside until needed or if prepared in advance place in container and store in the freezer.
