Preheat the air fryer to 180˚C.
Spray your air fryer basket with oil and place the tortilla pieces. Spray with a little more oil and cook for 3-5 minutes, checking after 2 minutes to ensure the tortilla pieces are not sting altogether. Cook in batches so the tortillas can crisp up!
In a saucepan, melt the butter over medium heat and gradually add the flour, whisking to create a roux. Gradually add the milk whisking until smooth.
Stir in the spices, mustard, and beer, add the cheese a little at a time stirring until melted.
Stir frequently until the mixture is smooth, thick and bubbling. Keep warm until ready the serve the tortilla!
