Air fryer tortilla crisps with beer cheese sauce

Ingredients
- 1 pack tortilla cut into bite size pieces.
- Oil spray
- Salt and pepper
Beer Cheese sauce
- 3 tbsp flour
- 2 tbsp butter
- 250 ml milk
- 150 ml ale beer or your favourite amber or porter beer
- ½ tsp garlic powder
- A pinch cayenne peppers
- 1 tsp Dijon mustard
- 200 g cheddar cheese
Instructions
- Preheat the air fryer to 180˚C.
- Spray your air fryer basket with oil and place the tortilla pieces. Spray with a little more oil and cook for 3-5 minutes, checking after 2 minutes to ensure the tortilla pieces are not sting altogether. Cook in batches so the tortillas can crisp up!
- In a saucepan, melt the butter over medium heat and gradually add the flour, whisking to create a roux. Gradually add the milk whisking until smooth.
- Stir in the spices, mustard, and beer, add the cheese a little at a time stirring until melted.
- Stir frequently until the mixture is smooth, thick and bubbling. Keep warm until ready the serve the tortilla!
