Summer Bacon Potato Salad
Use new potatoes when the new season is out for extra flavour!

Ingredients
- 1 kg baby potatoes
- 150 g smoked bacon lardons
- 3 shallots thinly sliced
- 2 tbsp sherry vinegar or other like cider vinegar
- 3 tbsp olive oil
- 1 tbsp chives chopped
- 1 tbsp oregano chopped
- Seasoning
- fresh peas optional
Instructions
- Boil the baby potatoes in a large saucepan with salted water for 15 -25 minutes until just tender. remove from the heat and set aside to cool for a few minutes still warm but to be able to handle the potatoes by hands.
- in the meantime, Heat a frying pan over medium high heat and cook the smoked bacon lardons in a little oil for 2-3 minutes or until crispy.
- add the shallots and garlic and saute a further minute or so until the shallots are softened.
- add the vinegar and deglaze the pan . remove from the heat and add the oil to create a hot dressing. season with salt and pepper and stir to combine well. sprinkle the herbs at this stage too.
- in a bowl, Slice the warm potatoes into rough chunks.
- Drizzle the shallot and dressing mixture over and carefully shake the bowl.
- This will help to soak the potatoes of the dressing.
- check the seasoning and enjoy within a few or 2-3 days .
