Parmesan cheese Biscuits

Ingredients
  

  • 500 g plain flour
  • 200 g butter
  • 100 g parmesan grated, or use templeGal cheese
  • 1 tsp thyme fresh leaves
  • ½ tsp table salt plus extra to sprinkle
  • ½ tsp black peppercorn
  • 2 eggs
  • 50 g olive oil

Instructions
 

  • Preheat the oven to 180˚C. prepare a baking tray with parchment paper.
  • In a bowl, combine the flour, butter and parmesan until it resembles a crumb texture.
  • Add the salt, pepper and thyme leaves and stir once more to disperse the ingredients.
  • Add in the eggs and olive oil and work it comes together into a uniform dough.
  • Roll the dough on a floured surface and using a 5cm diameter party cutter, press and create biscuits.
  • Transfers them to a baking tray, sprinkle wit hextra salt if desired and place them in the oven to bake for 10-12 minutes until lightly coloured.
  • Remove from the oven and set aside to cool.
  • Store in an airtight container for 2 weeks or so. If the biscuits are starting to soften, place them back for 2-3 minutes in a low oven to remove the excess humidity!
  • Enjoy with some sides.
