Hi MArgaret, We didn’t talk about the 2 ovens setup. what we have seen is if you have the 2 ovens set up, for baking in the roasting oven, add a cold baking tray on the top self to diffuse the radiant heat from the top part of the oven.

I love cooking and have mastered the different temperatures and everything is cooked in the two ovens

Hi. My Aga is a reconditioned 1800s Gas Aga. It did not have the modern controls just shown. I have moved house and just inherited it . i have zero knowledge and have
already burnt the top of my lasagne on the top oven. Any tips on avoiding this kind of disaster..
the top oven can get really hot and with radian heat even more risk of over caramelising the top of bakes and gratin. what we did in our older Aga was to place a tray on the top shelf to help insulate the gratin from excess heat. place the gratin then closer to the base of this oven so the heat comes more from the base of the oven rather than the top! with Aga ovens, the temperature won’t be changeable so the dish has to move depending on the timing and type of food or recipe! If you have 3 set ovens place it in the baking oven for more gentle heat, and finish it in the roasting oven to help create a crust!

Did Kevin use parchment paper on the Aga ring
we used an aga liner to help keep the ring clean! they are very practical and easy to find on their website.
