Coronation Chicken

This is my version of coronation chicken which is from my mother! You can add as well some sultanas, flaked almonds, cinnamon to vary the flavour or even add cooked diced potatoes to create a delicious coronation potato salad!

Ingredients
  

  • 1 tablespoon extra-virgin olive oil
  • 1 onion finely chopped
  • 200 g mayonnaise
  • 1 tbsp mild curry powder
  • 1 tsp tomato puree
  • ½ tsp ginger powder
  • ½ lemon juice
  • 1 tbsp dried apricots finely chopped
  • 1 tbsp mango chutney
  • 100 ml cream whipped
  • 2 large skinless chicken breasts cooked and shredded or cut into chunks
  • salt & pepper to taste

Instructions
 

  • In a saucepan, drizzle some oil and sauté the onions for 1-2 minutes until just softened. Remove from the heat and transfer in a bowl.
  • In the bowl, stir in mayonnaise, curry powder, ginger and tomato puree, mango chutney and chopped apricots.
  • Add in the lemon juice then season with salt and pepper to taste.
  • Fold in the whipped cream and keep aside until needed.
  • In a second bowl, prepare the cooked chicken into dices or shredded. Add enough of the curry mayonnaise to coat the chicken stirring well.
  • Check the seasoning and serve over salad leaves, in a sandwich or with some bake potatoes!
