
Thai Yellow Prawn Curry

Ingredients
- 1 tbsp oil
- 1 carrot sliced
- 1 red onion sliced
- 1 shallot sliced
- 1 green pepper sliced
- 100 g green beans sliced – optional
- 1 garlic cloves chopped
- 1 cm ginger grated
- 1 red chilli chopped
- 1 tin coconut milk
- 2 tbsp yellow Thai curry paste
- 20 king prawns raw
- 1 tbsp. soy sauce
- 1 lime zest
- 1 tbsp. basil leaves
- 1 tbsp mint
- 150 g Rice noodles or Udon noodles
Instructions
- Preheat a large saucepan or wok, until smoking hot.
- Drizzle the oil and add the carrots, red onion, shallot, green pepper, green beans, garlic, ginger, red chilli.
- Sauté for 3-5 minutes until the vegetables are just softened.
- Add the coconut, soy sauce and lime zest if using.
- Bring to the boil and simmer for 5 minutes or so.
- Next, add the prawns and continue simmering for 3-5 minutes until cooked fully.
- Remove from the heat and stir in the rice noodles, fresh mint, basil.
- Check the seasoning and serve immediately.
