Thai Yellow Prawn Curry

Ingredients
  

  • 1 tbsp oil
  • 1 carrot sliced
  • 1 red onion sliced
  • 1 shallot sliced
  • 1 green pepper sliced
  • 100 g green beans sliced – optional
  • 1 garlic cloves chopped
  • 1 cm ginger grated
  • 1 red chilli chopped
  • 1 tin coconut milk
  • 2 tbsp yellow Thai curry paste
  • 20 king prawns raw
  • 1 tbsp. soy sauce
  • 1 lime zest
  • 1 tbsp. basil leaves
  • 1 tbsp mint
  • 150 g Rice noodles or Udon noodles

Instructions
 

  • Preheat a large saucepan or wok, until smoking hot.
  • Drizzle the oil and add the carrots, red onion, shallot, green pepper, green beans, garlic, ginger, red chilli.
  • Saut√© for 3-5 minutes until the vegetables are just softened.
  • Add the coconut, soy sauce and lime zest if using.
  • Bring to the boil and simmer for 5 minutes or so.
  • Next, add the prawns and continue simmering for 3-5 minutes until cooked fully.
  • Remove from the heat and stir in the rice noodles, fresh mint, basil.
  • Check the seasoning and serve immediately.
