The simplest Sautéed cod

Ingredients
- 2 tbsp. olive oil
- 4 portions cod
- 2 onions sliced
- 2 carrots sliced
- 200 g mushroom sliced
- 8 baby potatoes cooked and diced
- 1 lemon juice
- 3 tbsp parsley chopped
- 2 scallions sliced
- 1 punnet pea shoot
- Salt and pepper
Instructions
- In a large pan, over medium heat, drizzle some oil and add the carrots, and potatoes.
- Sauté for 2 minutes then, add the onion, celery and mushrooms. Season well and Continue to sauté for a further 4-5 minutes until coloured. with a lid if needed. Remove from the heat once ready.
- In the meantime, In a second sauté pan, over high heat, drizzle some olive oil and add the fish, season well. Sear for 2 minutes until lightly coloured, then Flip the fish and add some butter if desired, I did not do it on the day but it would bring extra flavour. Squeeze over some lemon juice and cover with a lid if needed to cook the fish throughout for a further 2-3 minutes. Remove from the heat.
- Sprinkle some parsley and scallion over the vegetables and swirl in to combine all the flavours.
- Serve the fish with the vegetable with a sprinkle of fresh pea shot if available.
