
Strawberry and Gooseberry Jam
To add extra flavour, add some elderflower syrup

Ingredients
- 250 g fresh strawberries
- 250 g gooseberries
- 60-75 ml water
- 400 g caster sugar
- ½ lemon Juice
Instructions
- Crush with a masher the strawberries into the pot, add the gooseberries, water, sugar, lemon juice. Let it settle for 30 minutes minimum or overnight covered in the fridge if desired.
- Next, bring to the boil and reduce to a simmer.
- Simmer depending on the size of the saucepan and the quantity of mixture until a spoon of the jam sets on a chilled saucer or using a sugar thermometer, the mixture must reach 105ËšC. It might take 5 minutes or 20 minutes! This will indicate that the jam is fully set.
- Remove from the heat and immediately transfer to sterilized jars.
- Label and use as required.
- The jam will remain fresh for approximately 6-9 months.
Notes
Top tip: Although, Gooseberries are always very sharp, the darker they are the sweeter it will be.
