Italian Parmesan and Potato Flat Bread

Ingredients
- 3-5 Salad waxy Potatoes sliced thinly
- 200 g plain flour
- 300 ml water
- 3 tbsp rosemary chopped
- 2 cloves garlic chopped
- 70 g parmesan grated
- 4-5 tbsp extra virgin olive oil
- Salt and pepper
Instructions
- Preheat the oven to 180-200˚C and line a baking tray with parchment paper.
- Using a mandoline or a sharp knife, thinly slice the potatoes.
- Then, In a bowl, combine the flour, garlic, rosemary, salt and pepper with the water and half of the olive oil.
- Stir to create a smooth and liquid flour mixture.
- Add the sliced potatoes to the mixture and stir to coat the potatoes in the flour mixture.
- Immediately transfer and spread the mix onto the prepared baking tray. Flatten to even the mixture on the tray.
- Sprinkle the grated parmesan over and add some extra virgin olive oil . season with salt and pepper if desired.
- Place in the oven and let in bake for 25-35 minutes until the potatoes are cooked and the base of the bread is crispy and cook through.
- Remove from the oven and place on a serving plater.
- Slice into desired portion and serve immediate with extra sprinkle of parmesan and olive oil and some fresh herbs if eating it as a sharing lunch platter like we did !
