Cuisine One Pot Wonder
Ingredients
- 1 tbsp oil
- 6 Good-quality pork sausages
- 6 rashers rindless streaky bacon cut into 2.5cm/1in lengths
- 1 onion thinly sliced
- 1 green pepper
- 2 garlic cloves crushed
- ½-1 tsp hot chilli powder or smoked paprika
- 1 tsp turmeric
- 400 g tin tomatoes blitzed
- 300 ml veg stock
- 1 can kidney beans
Instructions
- Fry sausages after two minutes add your chopped bacon, when they begin to develop colour add in your chopped onion, garlic and peppers, sauté until onions are translucent
- Season with salt and pepper
- Add in your chilling powder or flakes and your turmeric
- Now place your kidney beans, blitzed tomatoes and stick into the pan bring to the boil and reduce the heat, leave to simmer for about 10-15 minutes until the sausages are fully cooked and the sauce reduces to coat the sausages.
