Wood-fired White Pizza

Ingredients
- 200 ml crème fraiche or sour cream
- 1 egg yolk
- 200 g cured ham Speck or Parma, sliced
- 2 new onions thinly sliced
- 200 g cheeses mozzarella, parmesan, or mature cheddar, finely grated
- 2 tbsp thyme sprigs
- Coarse salt and freshly ground black pepper
- 6 pizza dough ball ready to use

- Pesto
- Green salad leaves
Instructions
- Preheat the oven to 230˚C /450˚F set with a pizza stone or up to 450˚C in a wood fired oven.
- In the meantime, prepare your pizza dough.
- Next, prepare the crème fraiche mix. In a bowl, combine the crème fraiche, egg yolk, a tablespoon of olive oil with salt and pepper.
- Prepare the topping, such as fresh chopped onions, chopped speck or cured ham and grated cheese. (Parmesan and Mozzarella or other).
- Roll the pizza dough thinly and spread the creme fraiche mixture evenly over dough, leaving a centimetre around the edge. Top with the meat, onions, cheese, and thyme.
- Cook in the oven for 90- seconds in a woodfired oven or around 3-5 minutes until cooked to your liking in a conventional oven until the cheese is bubbling and the dough is well cooked and crispy.
- Remove from the oven and serve immediately with some green salad and a drizzle of pesto if desired.
