
Summer Sautéed surf and turf Cod

Ingredients
- 2 tbsp. olive oil
- 4 portions filet of Cod
- 1 onion sliced
- 75 g lardons
- 1 tbsp oregano chopped
- 4 cherry tomatoes halved
- 150 ml white wine
- 6 young baby potatoes boiled
- 4 anchovies whole
- Salt and pepper
Instructions
- In a saucepan, place the baby potatoes in water. Bring to the boil over medium heat and simmer for 15-20 minutes until the potatoes are cooked through.
- Next, in a large sauté pan, over medium heat, drizzle some oil. Add the fish and sear for 4 minutes. Flip the fish once and remove from the pan for a minute or so.
- In the same pan, add the onions, lardon, and sauté for 3-5 minutes until just lightly coloured and the bacon lardon cooked through.
- Add the cherry tomato and white wine. Bring to a simmer and add the fish back to the pan.
- Scatter the potatoes in the pan and spoon anchovies. Simmer for 5 -8 minutes with a lid in desired until the fish is fully cooked or flaky when slightly pushed on the thickest part.
- Season with salt and pepper.
- Remove from the heat and serve immediately.
