Spicy Ham potato Pie

Ingredients
- 1 tbsp sunflower oil
- 1 onion finely chopped
- 2 carrots chopped
- 3 garlic cloves crushed
- 2 sprigs thyme
- 300 g cooked ham sliced
- 50 g nduja sausage chopped
- 1 tbsp corn flour or flour
- 100 ml white wine or veg stock - optional
- 250 ml Cream
- 300 g mash potatoes
- 25 g butter diced
Instructions
- Pre-heat the oven to 180˚C.
- In a large sauté pan, over medium – high heat, drizzle some oil and add the onion, garlic, carrots, and thyme.
- Season with salt and pepper and sauté for 2 -3 minutes until lightly coloured.
- Add in the ham and nduja sausage and cook a further 3 minutes.
- Pour the white wine and cream. Bring back to the boil and simmer for a further 2-3 minutes. Remove from the heat and transfer into a ceramic or oven safe dish.
- Spoon or pipe the mash potato over the mixture.
- Add some diced pieces of butter if desired.
- Place in the oven and bake for 20-35 minutes until the mash potato is golden brown.
- Remove from the oven and leave to cool slightly before serving.
- Enjoy while hot with some salad leaves.
