Spicy Ham potato Pie

Ingredients
  

  • 1 tbsp sunflower oil
  • 1 onion finely chopped
  • 2 carrots chopped
  • 3 garlic cloves crushed
  • 2 sprigs thyme
  • 300 g cooked ham sliced
  • 50 g nduja sausage chopped
  • 1 tbsp corn flour or flour
  • 100 ml white wine or veg stock - optional
  • 250 ml Cream
  • 300 g mash potatoes
  • 25 g butter diced

Instructions
 

  • Pre-heat the oven to 180˚C.
  • In a large sauté pan, over medium – high heat, drizzle some oil and add the onion, garlic, carrots, and thyme.
  • Season with salt and pepper and sauté for 2 -3 minutes until lightly coloured.
  • Add in the ham and nduja sausage and cook a further 3 minutes.
  • Pour the white wine and cream. Bring back to the boil and simmer for a further 2-3 minutes. Remove from the heat and transfer into a ceramic or oven safe dish.
  • Spoon or pipe the mash potato over the mixture.
  • Add some diced pieces of butter if desired.
  • Place in the oven and bake for 20-35 minutes until the mash potato is golden brown.
  • Remove from the oven and leave to cool slightly before serving.
  • Enjoy while hot with some salad leaves.
