Smashed cheesy Potatoes

  • 8 Maris piper Potatoes
  • 2 onions quartered
  • ½ bulb Garlic cut horizontally
  • 100 g smoked Gubbeen cheese or mature Cheddar grated
  • 2 tbsp oil
  • 2 tbsp fresh herbs optional
  • Salt and pepper
  • 40 g salad leaves dressed with mustard dressing


  • Preheat oven to 180˚C.
  • Place the potatoes, halved garlic bulb and onion in a saucepan and fill with water and a pinch of salt. Bring the saucepan to boil and simmer for 30 to 35 minutes until the potatoes are soft.
  • Drain the potatoes with the garlic and onion.
  • Lay the potatoes, onion and garlic on a baking tray and lightly press with a potatoes masher to smash the potatoes.
  • Next drizzle with oil, Cheese, oil, herbs and extra salt and pepper if needed. Place in the oven and roast for 25 to 35 minutes until coloured.
  • Remove from the oven and enjoy while warm with a side of salad leaves.
