Ingredients
  

  • 24 Cocktail Sausages
  • 12 Streaky Bacon
  • 1 tbsp. whole grain mustard
  • 1 egg wash
  • 1 puff pastry sheet
  • Salt & Pepper to Season

Instructions
 

  • prepare the pigs in blankets. Using a rolling pin, roll the streaky bacon in between 2 sheet of non-stick baking paper to stretch and flatten them. cut in half and wrap each piece around a cocktail sausage.
  • In a small bowl, combine the egg wash with the mustard.
  • Unroll the puff pastry and cut thin bandelette. Brush with egg wash and mustard and wrap around the bacon pieces.
  • Place side by side onto a roasting tray and place in the oven for about 30 minutes until cooked through.

Notes

Black Pudding-Stuffed Dates
Instead of sausages, fill 16 pitted dates with 50g black pudding. Wrap the stuffed dates with bacon and secure with a cocktail stick. Brush over 1 tsp wholegrain mustard mixed with 1 tsp brandy before roasting.
Bacon-Wrapped Butternut Squash
Instead of sausages, cut 100g peeled butternut squash into 16 chunks and boil for 5 minutes, then drain and leave to dry. H on a tray .
Wrap each bundle with a piece of bacon, then secure each one together with a cocktail stick before roasting for 30 minutes at 180˚C.
