Place your pasta to cook in a pot of salted boiling water. Roughly chop your garlic and make into a paste using the side of your knife and some sea salt.
Pour olive oil into a large wok and add the garlic and onion. Cook without browning them for a minute or so until translucent.
Add your smoked paprika and fresh herbs. Add salt and pepper to taste.
When your pasta is cooked, remove it from the heat and drain in a colander, reserving about 4 tbsp of water. Add your pasta to your wok and top with the spinach. Cook for 1 minute.
Add the mozzarella and parmesan, stirring to coat the pasta.
Serve immediately and garnish with olive oil and black pepper.
