Heat a griddle pan over a high heat.
Brush the steaks with a little oil on both sides and season with some salt and pepper. Place the steaks on the griddle pan and grill for 2-3 minutes or until cooked through.
In the meantime, prepare the coleslaw. Combine in a bowl, the yogurt, mayonnaise, whole grain mustard, vinegar, salt and pepper . add the carrots, brussels sprouts, onions. Toss to combine and set aside.
Once the steaks or nearly cooked to your liking, In a sauté pan, over a medium heat, drizzle some oil and add the eggs. Cook for 2 minutes until just cooked.
Remove the steaks from the heat. Place on a serving dish. Add the egg , and sprinkle with cheese. To add extra flavour, place under the grill of an oven to melt the cheese.
Remove from the oven and serve with the coleslaw.
