Grilled Beef Striploin, Eggs, and Coleslaw

Ingredients
  

  • 4 striploin 4 x 200g
  • 1 tbsp. oil
  • 4 eggs
  • 4 brussels sprouts shredded
  • 1 onion chopped
  • 2 carrots grated
  • 2 tbsp. yogurt
  • 1 tbsp. mayonnaise
  • 1 tsp. wholegrain mustard or Dijon mustard
  • 1 tsp. cider vinegar
  • 4 tbsp. cheese grated
  • Salt & Pepper to season.

Instructions
 

  • Heat a griddle pan over a high heat.
  • Brush the steaks with a little oil on both sides and season with some salt and pepper. Place the steaks on the griddle pan and grill for 2-3 minutes or until cooked through.
  • In the meantime, prepare the coleslaw. Combine in a bowl, the yogurt, mayonnaise, whole grain mustard, vinegar, salt and pepper . add the carrots, brussels sprouts, onions. Toss to combine and set aside.
  • Once the steaks or nearly cooked to your liking, In a sauté pan, over a medium heat, drizzle some oil and add the eggs. Cook for 2 minutes until just cooked.
  • Remove the steaks from the heat. Place on a serving dish. Add the egg , and sprinkle with cheese. To add extra flavour, place under the grill of an oven to melt the cheese.
  • Remove from the oven and serve with the coleslaw.
  • Enjoy while piping hot!
