Chive Mashed Potatoes on Aga

Ingredients
- 4-5 large rooster potatoes peeled
- 50 g butter
- 50 ml fresh cream
- 4 tbsp chives snipped
- Salt and pepper
Instructions
- Cut the potatoes into chunks and place in a pan of water and bring to a boil on the boiling stovetop.
- Boil the potatoes for 2 minutes then remove the saucepan from the heat. Strain to remove excess water and transfer with the lid in the simmering oven for 25-30 minutes until fully softened.
- Mash the potatoes and pour in the cream and butter to make the potatoes nice and creamy.
- then add the chives and check the seasoning.
- Serve immediately or keep warm in the simmering oven.
Notes
for a roasted garlic mash potatoes
1 garlic bulb
Olive oil
salt and pepper preheat the roasting oven.
Place the bulb of garlic in tin foil. Drizzle with oil and season well.
close the foil around the bulb and place it on a baking tray. place in the oven for 40 minutes until coloured and softened. remove from the oven and press the garlic out of the bulbs. Store until needed up to 2-3 days in the fridge.
