  • 2 egg whites
  • 180 g ground almond
  • 160 g caster sugar
  • 1 tbsp Amaretto liqueur
  • 1 tsp vanilla extract
  • 3 tbsp icing sugar + extra


  • Preheat the oven to 160˚C. prepare a baking tray with parchment paper
  • In a bowl, beat the egg white to a soft peak. Slowly beat in the caster sugar to create a meringue.
  • In a second bowl, add the ground almonds, vanilla extract and amaretto.
  • Gently fold and beat the meringue mixture into the almond mixture until a smooth paste is achieved.
  • In a third bowl, combine 2 tbsp. icing sugar and 2 tbsp. caster sugar and flaked almonds.
  • Take about a walnut size of mixture and roll it in the sugar mixture.
  • Place on a baking tray.
  • Place in the oven and cook for 15-17 minutes until cooked.
  • Take them out of the oven, leave to cool for a couple of minutes on the tray and then place onto a cooling rack.
