Air Fryer Cheesy Courgette Slices

Ingredients
- 1 courgette
- 1 tbsp. grapeseed oil or avocado oil
- Salt and pepper
- 50 g Comté cheddar or Parmesan cheese, finely grated
- 75 g panko breadcrumb
- 1 tsp. dried mix herbs
- 1 egg beaten
Instructions
- Slice the courgette into ¼ inch / 5mm thick slices. Transfer to a bowl and drizzle with oil, garlic powder, salt and pepper. Gently toss to combine.
- In a second bowl, combine panko and grated cheese on a plate season with salt and pepper and the dried herbs.
- Set your air fryer to 200˚C/400°F to preheat the 5 minutes
- Dip the slices of courgette into beaten egg then into panko mixture, pressing to coat.
- Place the slices on the air fryer basket. Lightly spray with extra cooking spray if desired.
- Place the basket in the air fryer and cook for 8 minutes until coloured and cooked. Turn halfway if desired.
- Enjoy with your favourite side or as a snack. If done in advance reheat them in the air fryer for 2 minutes to bring extra crisp back.
