Pork Stir-fry

Sweet chilli Pork Stir fry

The meat is sliced very thinly it will look a lot with a small quantity!

Ingredients
  

  • 3 tbsp sunflower oil
  • 250 g Pork chops very thinly sliced into strips
  • 1 yellow pepper thinly sliced
  • 1 carrot sliced thinly
  • 1 onion sliced
  • 1 red chilli thinly sliced
  • 1 cm piece ginger chopped
  • 2 garlic cloves crushed
  • 2 tbsp peanut rayu optional
  • 2 tbsp. thai sweet chilli sauce
  • 2 tbsp. soy sauce
  • 1/2 tsp fish sauce
  • 1 tbsp honey
  • 4 portion boiled rice or egg noddle – optional to serve

Instructions
 

  • Have all your vegetables and meat sliced and ready to cook.
  • Heat the oil in a large wok, over very high heat until smoking hot, then add the pork and stirfry for a minute until golden and crisp.
  • Add the vegetables and for a further minute or so on high heat to slightly soften.
  • Add the peanut rayu if using, sweet chilli sauce, fish sauce, honey, and soy sauce.
  • Continue cooking and stiring the mixture for a further 2 minutes until the pork pieces are fully cooked and the mixture is well coated with the sauce.
  • Remove from the heat, drizzle some lime juice over and serve immediately with some boiled rice.
