Sweet chilli Pork Stir fry
The meat is sliced very thinly it will look a lot with a small quantity!

Ingredients
- 3 tbsp sunflower oil
- 250 g Pork chops very thinly sliced into strips
- 1 yellow pepper thinly sliced
- 1 carrot sliced thinly
- 1 onion sliced
- 1 red chilli thinly sliced
- 1 cm piece ginger chopped
- 2 garlic cloves crushed
- 2 tbsp peanut rayu optional
- 2 tbsp. thai sweet chilli sauce
- 2 tbsp. soy sauce
- 1/2 tsp fish sauce
- 1 tbsp honey
- 4 portion boiled rice or egg noddle – optional to serve
Instructions
- Have all your vegetables and meat sliced and ready to cook.
- Heat the oil in a large wok, over very high heat until smoking hot, then add the pork and stirfry for a minute until golden and crisp.
- Add the vegetables and for a further minute or so on high heat to slightly soften.
- Add the peanut rayu if using, sweet chilli sauce, fish sauce, honey, and soy sauce.
- Continue cooking and stiring the mixture for a further 2 minutes until the pork pieces are fully cooked and the mixture is well coated with the sauce.
- Remove from the heat, drizzle some lime juice over and serve immediately with some boiled rice.
