One-pan Tomato Pasta

Ingredients
- 200 g pasta shells
- 400 g tin diced tomato
- 1 onion diced
- 1 cloves garlic chopped
- 4 mushrooms sliced
- 1 tsp. mixed herbs
- 1 pinch chilli flakes
- 2 tbsp. olive oil
- 200 ml water or vegetable stock boiling
- 1 tbsp fresh parsley chopped – optional
- 50 ml cream
- 4 tbsp. grated parmesan
- Salt and pepper
Instructions
- Place all the ingredient in a saucepan except the cheese and half of the parsley.
- Bring to the boil over high heat. Reduce the heat, and simmer, stirring and turning the pasta with a spatula to prevent sticking for 12-15 minutes until the pasta is al dente and almost all the liquid has evaporated. Add extra liquid if needed during the cooking process.
- Add the cream and parmesan and stir to finish the pasta.
- Remove from the heat and serve immediately with a sprinkle with grated parmesan and a sprinkle of fresh parsley.
