One pan cherry Tomatoes and Feta pasta

  • 4 tbsp. olive oil
  • 2 shallots sliced
  • 2 garlic cloves chopped
  • 500 g cherry tomatoes
  • 150 ml white wine we used my own Kevin Dundon Sauvignon Blanc
  • 120 g feta crumbled
  • 250 g fusilli pasta or other
  • 20 g basil leaves fresh
  • 2 tbsp balsamic vinegar optional
  • Salt and pepper


  • bring a saucepan of salted water to the boil. Add the pasta and cook as per pack instruction. Drain and keep warm until ready.
  • In the meantime, in a sauté pan, over medium heat, drizzle the oil and add the shallots, garlic, and cherry tomatoes. Season well with salt and pepper.
  • Sauté for 5 minutes or until the tomatoes starts to burst.
  • Add the feta crumbled and the white wine. Stir and simmer for a further 2 minutes or so.
  • Once the pasta is cooked, add them to the dish and fold into the tomato mixture. Check the seasoning and sprinkle with extra basil leaves and balsamic vinegar if needed.
  • Serve while warm.
