One pan cherry Tomatoes and Feta pasta

Ingredients
- 4 tbsp. olive oil
- 2 shallots sliced
- 2 garlic cloves chopped
- 500 g cherry tomatoes
- 150 ml white wine we used my own Kevin Dundon Sauvignon Blanc
- 120 g feta crumbled
- 250 g fusilli pasta or other
- 20 g basil leaves fresh
- 2 tbsp balsamic vinegar optional
- Salt and pepper
Instructions
- bring a saucepan of salted water to the boil. Add the pasta and cook as per pack instruction. Drain and keep warm until ready.
- In the meantime, in a sauté pan, over medium heat, drizzle the oil and add the shallots, garlic, and cherry tomatoes. Season well with salt and pepper.
- Sauté for 5 minutes or until the tomatoes starts to burst.
- Add the feta crumbled and the white wine. Stir and simmer for a further 2 minutes or so.
- Once the pasta is cooked, add them to the dish and fold into the tomato mixture. Check the seasoning and sprinkle with extra basil leaves and balsamic vinegar if needed.
- Serve while warm.
