Preheat the oven to 200˚C.
Cook the pasta according to packet instructions. Drain and set aside.
Heat the oil in a frying pan and add the lardons, shallot, mushroom, and garlic and cook for 3-4 minutes or until lightly coloured.
Add in the mascarpone and season with salt and pepper. Over low heat, stir until the mascarpone melt and create a sauce.
Remove from the heat and stir in the cheese. Check the seasoning.
Fold the sauce mixture into the pasta ensuring it is evenly coated. Pour the mixture into ceramic dishes.
Place in a preheated oven for 10 – 15 minutes until the mixture is piping hot and golden brown.
Serve piping hot.
