Mascarpone Pasta Bake

  • 400 g macaroni or other Pasta
  • 1 tbsp oil
  • 200 g lardons chopped
  • 1 shallot sliced
  • 2 garlic cloves thinly sliced
  • 100 g mushroom sliced
  • 200 g mascarpone
  • 75 g grated cheddar cheese
  • salt and black pepper


  • Preheat the oven to 200˚C.
  • Cook the pasta according to packet instructions. Drain and set aside.
  • Heat the oil in a frying pan and add the lardons, shallot, mushroom, and garlic and cook for 3-4 minutes or until lightly coloured.
  • Add in the mascarpone and season with salt and pepper. Over low heat, stir until the mascarpone melt and create a sauce.
  • Remove from the heat and stir in the cheese. Check the seasoning.
  • Fold the sauce mixture into the pasta ensuring it is evenly coated. Pour the mixture into ceramic dishes.
  • Place in a preheated oven for 10 – 15 minutes until the mixture is piping hot and golden brown.
  • Serve piping hot.
