Ingredients
- 4 ginger biscuit crushed
- 4 tbsp butter melted, optional
- 200 g cream cheese
- 1 tbsp crème fraiche
- 1 egg
- 1 tbsp lemon curd
- 1 lemon zest
- 50 g blueberries
- To serve
- Icing sugar
Instructions
- Preheat the oven to 160˚C.
- place the crushed biscuit in to base.
- In a bowl, combine the cream cheese, crème fraiche, egg, lemon curd, lemon zest in a bowl. Combine until smooth.
- Spoon the mixture into the biscuits and sprinkle the bliueberries.
- Transfer in the oven and bake for 10-15 minutes until the mixture just starting to set.
- Remove from the oven and serve warm or at room temperature with a sprinkle of icing sugar.
