  • 4 ginger biscuit crushed
  • 4 tbsp butter melted, optional
  • 200 g cream cheese
  • 1 tbsp crème fraiche
  • 1 egg
  • 1 tbsp lemon curd
  • 1 lemon zest
  • 50 g blueberries
  • To serve
  • Icing sugar


  • Preheat the oven to 160˚C.
  • place the crushed biscuit in to base.
  • In a bowl, combine the cream cheese, crème fraiche, egg, lemon curd, lemon zest in a bowl. Combine until smooth.
  • Spoon the mixture into the biscuits and sprinkle the bliueberries.
  • Transfer in the oven and bake for 10-15 minutes until the mixture just starting to set.
  • Remove from the oven and serve warm or at room temperature with a sprinkle of icing sugar.
