Ingredients
- 400 g tagliatelle pasta or other
- 30 ml olive oil + extra to serve
- 1 onion chopped
- 1 clove garlic chopped
- 1 tsp. Fresh thyme
- 1/2 tsp. oregano
- 1/2 bay leaf
- 50 g mozzarella grated
- 50 g parmesan grated
- ¼ tsp smoked paprika
- 80 g baby spinach leaves
Instructions
- Place your pasta to cook in a pot of salted boiling water. Roughly chop your garlic and make into a paste using the side of your knife and some sea salt.
- Pour olive oil into a large wok and add the garlic and onion. Cook without browning them for a minute or so until translucent.
- Add your smoked paprika and fresh herbs. Add salt and pepper to taste.
- When your pasta is cooked, remove it from the heat and drain in a colander, reserving about 4 tbsp of water. Add your pasta to your wok and top with the spinach. Cook for 1 minute.
- Add the mozzarella and parmesan, stirring to coat the pasta.
- Serve immediately and garnish with olive oil and black pepper.
