Grilled Chicken Toasted Sandwich

Ingredients
- 2 tbsp oil
- 2 chicken fillets butterflied
- 4 slices bread I used sourdough
- 4 eggs
- 25 g butter
- 4 tbsp red onion marmalade
- 4 tbsp fresh goat cheese or similar
- 1 to mato sliced
- 40 g salad leaves
- Salt and pepper
Instructions
- Preheat a griddle pan or large sauté pan over medium heat.
- Drizzle some oil on the chicken pieces and place on the griddle pan. Cook depending on thickness for 4-5 minutes on both sides.
- In the meantime, toast the slices of bread either on a second pan or in the toaster.
- Once the chicken fillets are griddled, move them aside and keep warm.
- Cook the fried egg in the same pan with a dollop of butter until cooked to your liking.
- Once ready to serve, drizzle some butter on the toasted bread. Add some red onion marmalade, fresh goat cheese and slices of tomato. Season with salt and pepper.
- Add the chicken fillet and the fried egg.
- Serve immediately with some salad leaves.
