Espresso Martini Eton mess
A simple and delicious way to end a party with a dessert that combines the trendiest cocktail of the moment and fabulous dessert! if you prefer to make the classic cocktail you will need 2 parts of vodka, 1 part of kalua and 1 part of coffee per person!

Ingredients
- 200 g mascarpone cheese
- 250 g cream
- 2 tbsp Kahlúa 1+1
- 25 ml Freshly Brewed Espresso
- 3 tbsp instant coffee
- 3 tbsp. brown sugar or honey or more
- 1 tbsp vodka or more
- 1 tbsp water
- 4 meringue nests
To decorate.
- Cocoa powder to decorate
- 12 chocolate Coffee Beans
Instructions
- First, Prepare the coffee foam, in a bowl, using a balloon whisk or a stand mixer, place the instant coffee with sugar, 1tbsp Kahlua, 1 tbsp vodka and water. Whisk for 5 -8 minutes until the mixture foam and create a stable thick foam. This foam will give the strength to the dessert, if needed add extra honey to sweeten it slightly. Keep aside for a few minutes.
- Then , prepare the cream mixture.
- In a bowl, combine the mascarpone with the cream, the vanilla bean paste, cold espresso and 1 tbsp Kahlua to bring extra strength if desired.
- Crush the meringues in the cream and transfer in the serving cups.
- Spoon the meringue and cream mixture in serving cups, decorate with extra meringues if desired. Just before serving, spoon over a tablespoon of the strong coffee foam. Remember that this foam is very strong so a little goes a long way!
- Sprinkle with cocoa powder and some chocolate coffee bean over!
- Enjoy immediately.
