
Crispy Satay Prawns

Ingredients
- 1 tbsp garlic chopped
- 1 tbsp fresh ginger grated
- 1 red chilli sliced
- 1 tbsp soy sauce
- ½ tsp fish sauce
- 1 tbsp curry powder
- 1 lime juice and zest
- 3 tbsp peanut butter smooth
- 1 tbsp pinch turmeric powder as only a colorant, so very little!
- 4-6 tbsp coconut milk
- 200 g prawns shelled
- 150 g panko breadcrumb
- 3 tbsp oil
- 2 tbsp kimchi we used FrothingFerment.ie
Instructions
- In a small bowl, combine the garlic, ginger, fish sauce, soy sauce, curry powder, turmeric, and coconut milk with the peanut butter.
- In a larger bowl, place the prawn tails. Add 2 or 3 tbsp of the satay mixture to the bowl with the prawns and marinate for 3-10 minutes.
- Toss in breadcrumb.
- Preheat over medium low heat a saucepan with 1 cm of sunflower oil or preheat the air fryer to 200˚C. add the prawns and sauté for 2 -3 minutes on both sides until cooked through.
- Serve immediately with some salad leaves and kimchi if desired.
