Crispy Cheesy Fried Eggs

Ingredients
- 50 g parmesan grated
- 50 g cheddar grated
- 4 eggs
- 50 g butter
- 150 g day old bread sliced into large pieces
- 40 g rocket leaves
- Salt and pepper
Instructions
- Preheat a non stick sauté pan over medium heat.
- Prepare some bread crouton by sauteing the bread pieces in a warm sauté pan or in the oven for 5 minutes. Remove from the heat and keep warm on a kitchen paper to remove excess oil.
- Sprinkle the parmesan and cheddar. Let the cheeses melt and start to colour and create a crusty skin for a minute or so depending on the heat.
- Add the fried egg and add some butter to the pan.
- Spoon the butter over the eggs and cover with a lid.
- Cook for a further 2 minutes or until the egg white is opaque yet the egg yolk still soft and runny or to your liking.
- Season well and turn off the heat while cooking the fried eggs.
- Remove from the heat, carefully lift the crispy cheese layered fried egg and serve immediately with the croutons and some salad leaves.
