Cream Cheese and Mushroom Steak Sandwich

Ingredients
- 2 tbsp olive oil
- 1 onion sliced.
- 2 garlic cloves chopped
- 2 sprigs thyme
- 200 g button mushrooms sliced
- 100 ml beef stock or white wine
- 200 g Cream cheese
- 4 thick slices batch loaf
- 1 tbsp butter
- 4 Irish beef minute steaks
- Salt and pepper
Instructions
- Heat 1 tbsp of oil in a frying pan over medium heat. Add the onions, garlic and mushroom, thyme and cook for 2 minutes until golden. Season well.
- Add the stock and cream cheese and simmer over low heat to create a coating sauce for 2-3 minutes. Remove from the heat and keep warm.
- On the griddle pan, place the slices of bread and toast them using the cooking fat from the beef or add a drizzle of oil or butter. toast both sides and keep warm on the side.
- Season with salt and pepper.
- In the meantime, on a griddle pan, over high heat, season the pan with some salt if desired.
- Drizzle the rest of the oil on the minute beef steaks pieces to coat.
- Once, smoking hot, add the minute steaks to the griddle pan and sear on high for a minute or two on each side until just seared. Remove from the pan and toss the beef pieces in the mushroom mixture.
- Divide the mushroom and beef slices on the toasted bread slices, add extra pepper and enjoy while hot.
- for extra flavour and richness, sprinkle some grated cheese!
