Italian Sliced Apple Cake

Ingredients
- 2 apples thinly sliced
- ½ lemon zest and juice – optional
- 3 eggs
- 150 g caster sugar
- 100 g butter melted
- 100 ml milk
- 120 g flour
- 5 g baking powder
- 50 g Pine nuts or flaked almonds
Instructions
- Preheat the oven to 160˚C.
- Line an 8 inch round cake pan with baking paper and lightly grease with butter or spray with oil.
- Put the chopped apples in a small bowl and pour the lemon juice over them.
- Beat the sugar and eggs until very light and fluffy. Stir in the melted butter, flour and baking powder and finally the milk. add the lemon zest.
- Toss in half of the apple sliced and pour into a cake tin. Arrange the rest of the sliced apples on the top in a circle pattern. Dust with icing sugar and a sprinkle of brown sugar if desired. Sprinkle the nuts too at this stage.
- Transfer in the oven and bake for 45-60 minutes or until cooked through.
- Remove from the oven and set aside to cool for a while.
- To serve, sprinkle extra icing sugar. I like serving this cake warmed a little from the oven with some fresh cream or maybe some delicious ice cream.
