Preheat the oven to 160˚C.
Line an 8 inch round cake pan with baking paper and lightly grease with butter or spray with oil.
Put the chopped apples in a small bowl and pour the lemon juice over them.
Beat the sugar and eggs until very light and fluffy. Stir in the melted butter, flour and baking powder and finally the milk. add the lemon zest.
Toss in half of the apple sliced and pour into a cake tin. Arrange the rest of the sliced apples on the top in a circle pattern. Dust with icing sugar and a sprinkle of brown sugar if desired. Sprinkle the nuts too at this stage.
Transfer in the oven and bake for 45-60 minutes or until cooked through.
Remove from the oven and set aside to cool for a while.
To serve, sprinkle extra icing sugar. I like serving this cake warmed a little from the oven with some fresh cream or maybe some delicious ice cream.
