Peanut marinated Chicken Skewers, cucumber salad

Ingredients
- 60 g peanut butter we used Harry Nutter paprika brand
- 3 cloves garlic crushed
- 1 tbsp. Soy sauce
- 1 tbsp. sesame oil
- 1 tsp. ginger powder
- 2 lime zest and juice
- 500 g chicken fillet diced
- 1 cucumber diced
- 2 tbsp. coriander leaves
- 1 tbsp basil leaves torn
- 3 spring onions sliced
- 1 tbsp. sunflower oil
- 4 pita bread warmed
- Salt and pepper
Instructions
- In a bowl, combine the peanut butter, 2 cloves crushed garlic, soy sauce, sesame oil, mirin, ginger and the juice and zest of one lime.. Add the chicken, Stir to coat and marinate for 20-30 minutes minimum or over night in the refrigerator covered in cling film.
- Preheat a griddle pan or barbecue to medium heat.
- Tread the marinated pieces on skewers with some pieces of peppers and onions.
- Grill the chicken skewer for 3-5 minutes each side or until lightly charred and cooked through.
- In the meantime, In a bowl , combine the cucumber, spring onions, coriander, basil, the last crushed garlic clove, 1 lime, segmented and the zest and a drizzle of oil.
- Serve the chicken skewer over a warm pita. Removing the skewers and then topping with some of the salad preparations.
- Enjoy immediately.
