Warm Breaded Baked Pesto Camembert

Ingredients
- 200 g Brie or camembert – small
- 2 tbsp mascarpone
- 1 tbsp basil pesto or more if desired
- 1 tbsp flour or Gluten Free flour
- 1 egg beaten
- 4 tbsp Panko breadcrumb or GF version
To serve
- 200 g red onion relish
- 100 g sliced bread

- Salt and pepper
Instructions
- Preheat the air fryer to 200ºC.
- Remove all inner packaging from the cheese.
- Slice the cheese, in half.
- In a small bowl, combine the mascarpone, pesto.
- Spoon the mixture on one half of the cheese and place the second piece of cheese over to create a sandwich.
- Carefully toss the cheese in flour, then in the beaten egg then in the breadcrumb to create a light crust all around.
- Place in in a small ovenproof ceramic dish to fit the cheese. Sprinkle black pepper and salt.
- Bake in the air fryer oven for 10-15 minutes or so, until the cheese is warmed and melted in the center.
- Cut into the cheese and peel back the rind, dip in the bread and crackers. Serve with some onion relish.
- Enjoy while piping hot.
