Warm Breaded Baked Pesto Camembert

Ingredients
  

  • 200 g Brie or camembert – small
  • 2 tbsp mascarpone
  • 1 tbsp basil pesto or more if desired
  • 1 tbsp flour or Gluten Free flour
  • 1 egg beaten
  • 4 tbsp Panko breadcrumb or GF version

To serve

  • 200 g red onion relish
  • 100 g sliced bread
  • Crackers check my recipes online
  • Salt and pepper

Instructions
 

  • Preheat the air fryer to 200ºC.
  • Remove all inner packaging from the cheese.
  • Slice the cheese, in half.
  • In a small bowl, combine the mascarpone, pesto.
  • Spoon the mixture on one half of the cheese and place the second piece of cheese over to create a sandwich.
  • Carefully toss the cheese in flour, then in the beaten egg then in the breadcrumb to create a light crust all around.
  • Place in in a small ovenproof ceramic dish to fit the cheese. Sprinkle black pepper and salt.
  • Bake in the air fryer oven for 10-15 minutes or so, until the cheese is warmed and melted in the center.
  • Cut into the cheese and peel back the rind, dip in the bread and crackers. Serve with some onion relish.
  • Enjoy while piping hot.
