Amaretti Biscuits

Ingredients
- 2 egg whites
- 180 g ground almond
- 160 g caster sugar
- 1 tbsp Amaretto liqueur
- 1 tsp vanilla extract
- 3 tbsp icing sugar + extra
Instructions
- Preheat the oven to 160˚C. prepare a baking tray with parchment paper
- In a bowl, beat the egg white to a soft peak. Slowly beat in the caster sugar to create a meringue.
- In a second bowl, add the ground almonds, vanilla extract and amaretto.
- Gently fold and beat the meringue mixture into the almond mixture until a smooth paste is achieved.
- In a third bowl, combine 2 tbsp. icing sugar and 2 tbsp. caster sugar and flaked almonds.
- Take about a walnut size of mixture and roll it in the sugar mixture.
- Place on a baking tray.
- Place in the oven and cook for 15-17 minutes until cooked.
- Take them out of the oven, leave to cool for a couple of minutes on the tray and then place onto a cooling rack.
