Air fryer Roasted Potatoes

Ingredients
  

  • 6 Rooster Potatoes cut in large chunks
  • A few splashes of oil spray – optional
  • Salt & Pepper

Instructions
 

  • Place in a wide saucepan, the potato pieces, cover with water and add some salt.
  • Bring to the boil and reduce the heat to medium/low. Simmer for 7-10 minutes or until nearly cooked yet holding their shapes. Drain the potatoes and return to the pan, shake vigorously to roughen up and fluff-up the edges.
  • Add if desired, a drizzle of oil or spray oil over the potatoes and season well with salt and pepper.
  • Place in the air fryer basket and air fry for 15-20 minutes until roasted, nice and crispy on the outside yet soft in the centre.
  • Remove from the air fryer and serve while still warm with a sprinkle of salt flakes!

Notes

This is a lovely twist to traditional roast potatoes, sure to make a regular appearance on the table. you can have the potatoes boiled ahead and set a a tray in the fridge overnight.
