Air Fryer Thai Pork Steak

Ingredients
  

  • 1 pork steak or pork loin (you can also use 4 pork chops)
  • 5 tbsp sweet chilli sauce
  • 2 tbsp soy sauce
  • 2 tsp sesame oil
  • 2 garlic chopped
  • 1 cm ginger chopped
  • 1 lime zest then quartered to serve
  • 200 g mange tout
  • ½ cucumber sliced
  • 2 tbsp peanut optional
  • 4 tbsp fresh coriander
  • Boiled Jasmin rice to serve

Instructions
 

  • In a bowl, combine the sweet chilli sauce, soy sauce, sesame oil, the garlic, the ginger and the lime zest. Combine and spoon half of the mixture in a second bowl with the pieces of pork steaks. Coat and marinate for 30 minutes if possible. Keep the rest of the sauce for the vegetables later.
  • In the meantime, cook the rice as pre package instruction.
  • Pre heat the air fryer to 200˚C . add the marinated pieces of pork to the air fryer. Cook for 15 minutes or so until cooked through (depending on the thickness of the portions or if left whole, cook for about 25-30 minutes to ensure it is fully cooked.)
  • Carefully remove pork to a plate and let rest for at least 5 minutes covered with foil to settle the cooking juices.
  • Once nearly ready to serve, using a wok with a drizzle of oil, sauté the mange tout with the rest of the sweet chilli and soy mixture. Add a drop of water and cook for 2 minutes until just softened yet still crunchy.
  • carve the rested pork filet and serve immediately under a bed of boiled rice, the sauted vegetables, slices of cucumber, a slice of lime and a sprinkle of peanuts and fresh coriander.
  • Enjoy while warm.
