Easy Creamy Summer Pasta

Ingredients
- 400 g Spaccatelli pasta or other pasta shapes
- 1 tbsp olive oil
- 1 onion sliced
- 6 cherry tomatoes halved
- 2 cloves garlic chopped
- 200 g smoked ham grated
- 2-3 asparagus sliced
- 50 g peas fresh
- 100 ml cream
- 40 g spinach leaves torn.
- 70 g parmesan grated
- Salt and pepper
Instructions
- In a saucepan, fill with salted water and bring to the boil. Add the pasta and cook as per package instructions.
- When your pasta are cooked, remove from the heat . drain the pasta and keep some of the cooking water to add to the sauce in a while.
- In a second saucepan, melt over medium heat the oil, add the onion and garlic and cook for 60-90 seconds over medium heat.
- Add the cherry tomato and ham. Continue to sauté for a further minute then add the asparagus and peas. Season with salt and pepper.
- Add 100ml of the reserved pasta cooking liquid and the drained pasta with the cream and parmesan. Stir and simmer for 2-3 minutes.
- Add the spinach and let the spinach wilt. Check the seasoning.
- Serve immediately with extra parmesan grated over the plate.
