Spiced Sauteed Egg and Sausage

Ingredients
- 6 eggs
- 1 tbsp oil
- 6 sausages
- 1 onion chopped
- 100 g butter
- 4 baby potatoes cooked and halved
- 2 cloves garlic finely chopped
- 1 tbsp Cajun spices
- 2 tbsp brown sugar
- 2 tbsp coriander leaves to serve
- salt and pepper
Instructions
- in a saucepan, bring to boil the water. Carefully drop the eggs and boil for 5 minutes.
- Remove from the heat and cool the eggs in ice water or under a running cold-water tap. This will help keep the egg to a semi hard boiled . but hard boiled will work too!
- Once cooled, peel the eggs and cut in halves. keep aside.
- Over medium heat, drizzle some oil and cook the sausages and onions until coloured.
- Add the butter, and let it foam.
- Add the garlic, Cajun spices, and sugar. Season generously with salt and pepper
- Cook for a further 1-2 minutes, to coat and enhance the spices within the butter.
- Add the halved boiled eggs and stir in the mixture.
- Sprinkle the coriander and serve immediately.
