Roasted Rack of Lamb with Marmalade Crust

Ingredients
- 2 racks of Irish lamb French trimmed, we used Wexfod Irish Country Meats
- 200 g orange Marmalade We used Wexford Home Preserves
- sea salt we used Wexford sea salt
- Ground black Pepper
- 2 sprigs rosemary
- 4 cloves garlic crushed
Instructions
- Preheat the oven to 200˚C.
- place the garlic on a roasting tray. Using a spoon spread the marmalade over the racks and season with some salt and pepper.
- Place in a preheated oven for 20-25 minutes, depending on how you like it cooked.
- Allow to rest for 5-10 minutes.
- Carve as required and serve with your favourite sides of vegetables.
