Roasted Rack of Lamb with Marmalade Crust

Ingredients
  

  • 2 racks of Irish lamb French trimmed, we used Wexfod Irish Country Meats
  • 200 g orange Marmalade We used Wexford Home Preserves
  • sea salt we used Wexford sea salt
  • Ground black Pepper
  • 2 sprigs rosemary
  • 4 cloves garlic crushed

Instructions
 

  • Preheat the oven to 200˚C.
  • place the garlic on a roasting tray. Using a spoon spread the marmalade over the racks and season with some salt and pepper.
  • Place in a preheated oven for 20-25 minutes, depending on how you like it cooked.
  • Allow to rest for 5-10 minutes.
  • Carve as required and serve with your favourite sides of vegetables.
