Roasted chicken thighs with garlic cream

Ingredients
  

  • 4 small onion finely chopped
  • 1 bulb garlic whole
  • 1 tbsp mixed dried herbs
  • 8 chicken thighs skin still on
  • 2 tbsp olive oil
  • 250 ml cream
  • salt and freshly ground black pepper

to serve

  • Mash potato
  • Green beans

Instructions
 

  • Preheat the oven to 180C.
  • In a roasting tray , lay the onions, Add the bulb of garlic then the chicken thighs and season well with salt and pepper.
  • Sprinkle some herbs at this stage.
  • Cover with foil , and place in the oven.
  • Roast in the oven for 25-30 minutes then remove the foil and place back in the oven.
  • Roast for a further 1015 minutes until the chicken are crispy and cooked through.
  • In the meantime, prepare your vegetables. We prepared some mash potatoes.
  • Remove the chicken from the oven and keep the chicken pieces on a serving plater covered to keep warm.
  • In a small saucepan, bring to simmer the cream, add some of the cooked onions in the chicken fat and the confit roasted garlic.
  • Blend using a hand held blender until combined.
  • Check the seasoning.
  • Serve the chicken with your favourite side and the garlic chream.
  • Enjoy piping hot.
