Roasted chicken thighs with garlic cream

Ingredients
- 4 small onion finely chopped
- 1 bulb garlic whole
- 1 tbsp mixed dried herbs
- 8 chicken thighs skin still on
- 2 tbsp olive oil
- 250 ml cream
- salt and freshly ground black pepper
to serve
- Mash potato
- Green beans
Instructions
- Preheat the oven to 180C.
- In a roasting tray , lay the onions, Add the bulb of garlic then the chicken thighs and season well with salt and pepper.
- Sprinkle some herbs at this stage.
- Cover with foil , and place in the oven.
- Roast in the oven for 25-30 minutes then remove the foil and place back in the oven.
- Roast for a further 1015 minutes until the chicken are crispy and cooked through.
- In the meantime, prepare your vegetables. We prepared some mash potatoes.
- Remove the chicken from the oven and keep the chicken pieces on a serving plater covered to keep warm.
- In a small saucepan, bring to simmer the cream, add some of the cooked onions in the chicken fat and the confit roasted garlic.
- Blend using a hand held blender until combined.
- Check the seasoning.
- Serve the chicken with your favourite side and the garlic chream.
- Enjoy piping hot.
