Baked Cod in Tomato and Basil

Ingredients
- 3 tbsp olive oil
- 2 red onions
- 2 garlic cloves
- 100 ml white wine
- 600 ml tomato passata
- 20 cherry tomatoes halved
- 1 bunch basil
- 4 portions cod
- 1 tbsp balsamic vinegar
- 1 pinch salt
- 1 pinch pepper
Instructions
- Preheat oven to 210˚C
- heat the oil, over medium heat, in an oven safe saucepan, add the onions and garlic and saut for 2 minutes. Add the white wine, tomato passata, cherry tomatoes, salt and pepper and half of the basil leaves. Bring to simmer and cook covered with a lid, on medium heat, for 3 minutes or until the cherry tomato just start to soften.
- Place the portions of cod skin facing up in the tomato mixture, season well and add a drizzle of balsamic vinegar. Transfer in the oven and Bake for 12-15 minutes without a lid until the cod are cooked through.Remove from the oven, sprinkle a few more fresh leaves of basil leaves and serve immediately with your favourite side either salad leaves, boiled potatoes or Spaghetti to name a few!
