Sautéed Potatoes Campagnarde

  • 6 waxy potatoes thinly sliced, about 2–3mm thick
  • 100 g bacon lardon
  • 1 onion finely diced
  • 2 garlic cloves crushed
  • 2 sprigs rosemary chopped
  • Salt & Pepper to season


  • in a sauté pan, over medium heat, pour some oil and add the potatoes, bacon, onion, garlic, and rosemary.
  • Over moderate heat, cook 8-10 minutes covered with a lid for the first 5 minutes, to help cook the potatoes faster.
  • Shake the pan every so often to have the uniform colouration. Check the seasoning.
  • Serve immediately.
